Ingredients
  

Pumpkin
  • 1 cup pumpkin puree
  • 2 eggs eggs
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 cup protein powder (vanilla or unflavored)
  • 1 cup oat flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix pumpkin, eggs, maple syrup, and vanilla.
  3. Add protein powder, oat flour, baking powder, cinnamon, nutmeg, and salt. Stir well.
  4. Divide batter into muffin cups.
  5. Bake for 20-25 minutes until a toothpick comes out clean.
  6. Cool before serving.

Notes

Use unflavored protein powder for versatility.
