Method
- Preheat oven to 350°F (175°C) and line a muffin tin.
- Mix pumpkin, eggs, maple syrup, and vanilla.
- Add protein powder, oat flour, baking powder, cinnamon, nutmeg, and salt. Stir well.
- Divide batter into muffin cups.
- Bake for 20-25 minutes until a toothpick comes out clean.
- Cool before serving.
