Method
- Preheat oven to 375°F (190°C). Line muffin tin.
- Whisk together flour, baking soda, and salt.
- Cream together butter and sugar until fluffy.
- Beat in eggs, then stir in vanilla extract.
- Add dry ingredients alternating with bananas. Mix until combined.
- Fold in chocolate chips.
- Fill muffin cups 2/3 full.
- Bake for 18-20 minutes, or until a skewer comes out clean.
- Cool in tin, then transfer to a wire rack.
Notes
For extra flavor, add a sprinkle of cinnamon to the batter.
