  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened (1 stick)
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (about 2-3 medium)
  • 1/2 cup chocolate chips

Method
 

  1. Preheat oven to 375°F (190°C). Line muffin tin.
  2. Whisk together flour, baking soda, and salt.
  3. Cream together butter and sugar until fluffy.
  4. Beat in eggs, then stir in vanilla extract.
  5. Add dry ingredients alternating with bananas. Mix until combined.
  6. Fold in chocolate chips.
  7. Fill muffin cups 2/3 full.
  8. Bake for 18-20 minutes, or until a skewer comes out clean.
  9. Cool in tin, then transfer to a wire rack.

Notes

For extra flavor, add a sprinkle of cinnamon to the batter.
