Ingredients
  

Dry ingredients
  • 1 ¾ cups all-purpose flour
  • 1 tablespoon pumpkin spice
  • 1 teaspoon baking soda
  • ½ teaspoon salt
Wet ingredients
  • 1 can (15 oz) pumpkin puree
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • 2 large eggs
  • ½ cup vegetable oil or melted butter
  • 1 tablespoon vanilla extract
Cream cheese swirl
  • 8 oz cream cheese room temperature
  • ¼ cup granulated sugar
  • 1 large egg yolk room temperature
  • 2 teaspoons vanilla extract

Method
 

  1. Preheat oven to 375°F (190°C). Line muffin tin with paper cups.
  2. Mix dry ingredients in a bowl. Whisk wet ingredients in another bowl.
  3. Combine wet and dry, fill muffin cups ¾ full.
  4. Beat cream cheese with sugar, egg yolk, and vanilla until smooth. Drop spoonfuls onto batter and swirl.
  5. Bake for 18-20 minutes. Cool before serving.

Notes

For best swirl effect, use a toothpick to gently swirl the cream cheese into the batter.
