  • 1 piece whole turkey (12-14 pounds), thawed
  • 1/2 cup unsalted butter, softened
  • 2 tablespoons olive oil
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh sage, chopped
  • 4 cups chicken or turkey broth
  • 1 large onion, quartered
  • 2 carrots cut into large pieces
  • 2 celery stalks cut into large pieces
  • as desired Fresh herbs for stuffing (optional)

Method
 

  1. Preheat oven to 325°F (165°C).
  2. Mix butter, olive oil, salt, pepper, garlic, onion, and herbs.
  3. Remove giblets, pat turkey dry, and rub with butter mixture.
  4. Stuff cavity with onion, vegetables, and herbs. Roast on rack with broth.
  5. Roast until internal temperature reaches 165°F (75°C). Rest before carving.
