Butter
  • 0.5 cup unsalted butter melted and browned
Bananas
  • 3 large ripe bananas, mashed
Sugars
  • 0.5 cup packed brown sugar
  • 0.33 cup granulated sugar
Eggs
  • 1 large egg
Vanilla
  • 1 teaspoon vanilla extract
Leavening Agents
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
Flour
  • 1.5 cups all-purpose flour
Chocolate Chips
  • 0.5 cup mini chocolate chips

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Brown the butter in a saucepan until nutty, then cool slightly.
  3. Mix mashed bananas, sugars, egg, and vanilla until combined.
  4. Stir in browned butter, then add baking soda and salt.
  5. Fold in flour and chocolate chips, then divide batter into muffin cups.
  6. Bake for 18-22 minutes, cool before serving.

Notes

For extra flavor, sprinkle some sea salt on top before baking.
