Ingredients
  

Bananas
  • 3 medium bananas ripe, mashed
  • ½ cup melted butter
  • ¾ cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • cup flour for crumb topping
  • cup brown sugar for crumb topping
  • ½ teaspoon cinnamon for crumb topping
  • 2 tablespoons cold butter, cubed for crumb topping
Optional toppings
  • handful walnuts or pecans optional
  • handful chocolate chips optional

Method
 

  1. Preheat oven to 350°F (180°C). Grease a loaf pan.
  2. Mash bananas, then mix with melted butter, brown sugar, egg, and vanilla.
  3. Combine flour, baking soda, salt, and cinnamon; fold into wet ingredients.
  4. Pour batter into pan. Mix flour, sugar, cinnamon, and butter for crumb; sprinkle on top.
  5. Bake for 50–60 minutes, cool before serving.

Notes

For extra flavor, add walnuts or chocolate chips to the batter or topping.
