Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon cinnamon
  • 1/4 cup brown sugar

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, melted butter, baking soda, salt, sugar, egg, and vanilla.
  3. Stir in flour until just combined. Mix cinnamon and brown sugar for swirl.
  4. Pour half batter into pan, sprinkle with cinnamon mixture, add remaining batter, swirl, and top with cinnamon.
  5. Bake for 60-65 minutes, cool in pan for 10 minutes, then transfer to wire rack.

Notes

Use ripe bananas for best flavor and sweetness.
