Method
- Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
- Mix bananas, butter, sugar, egg, and vanilla in a bowl.
- Whisk flour, baking soda, and salt in a separate bowl. Add to wet mixture.
- Combine cinnamon and brown sugar in a small bowl.
- Pour half the batter, sprinkle half the cinnamon mixture, then repeat.
- Swirl cinnamon mixture through the batter.
- Bake for 60-70 minutes, or until a toothpick comes out clean. Tent with foil if browning too quickly.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For extra flavor, add chopped nuts or chocolate chips to the batter.
