Bread
  • 1 pound day-old bread, cut into 1-inch cubes about 8 cups
  • 0.5 cup unsalted butter
  • 1 large yellow onion, chopped
  • 2 stalks celery, chopped
  • 1 cup dried cranberries
  • 1 teaspoon dried thyme
  • 0.5 teaspoon black pepper
  • 1 teaspoon salt
  • 3 cups hot chicken or vegetable broth
  • 2 tablespoons fresh parsley, chopped for garnish (optional)

Method
 

  1. Air dry bread cubes for at least 8 hours or bake at 250°F for 20-30 minutes until lightly golden.
  2. Melt butter in a skillet, cook onions and celery until softened, then stir in thyme, pepper, and salt.
  3. Combine sautéed vegetables, cranberries, and bread cubes in a large bowl. Pour hot broth gradually, mixing gently.
  4. Transfer mixture to a buttered baking dish, cover with foil, and bake at 375°F for 30 minutes. Remove foil and bake 20-25 minutes until golden and crispy.
  5. Let stand 10 minutes, garnish with parsley if desired, then serve.

Notes

Ensure bread is properly dried to prevent sogginess.
