Ingredients
  

Pasta
  • 400 grams spaghetti
  • 150 grams pancetta diced
  • 3 large eggs
  • 50 grams Parmesan cheese grated
  • 1 tsp black pepper freshly ground
  • 1 tbsp olive oil

Method
 

  1. Cook spaghetti in boiling salted water until al dente, then drain.
  2. In a pan, heat olive oil and cook pancetta until crispy.
  3. Beat eggs with grated Parmesan and black pepper.
  4. Combine hot pasta with pancetta, then quickly mix in egg mixture to create a creamy sauce.
  5. Serve immediately with extra Parmesan and pepper if desired.
