Classic Spaghetti Carbonara

Ingredients
  

Pasta
  • 400 grams spaghetti
  • 150 grams pancetta or bacon diced
  • 3 large eggs beaten
  • 1 cup grated Parmesan cheese
  • 1 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil

Method
 

  1. Cook spaghetti in boiling salted water until al dente, then drain.
  2. In a pan, heat olive oil and cook pancetta until crispy.
  3. In a bowl, beat eggs and mix with grated Parmesan cheese.
  4. Combine hot pasta with pancetta, then remove from heat and quickly stir in egg mixture.
  5. Season with black pepper and serve immediately.

Notes

Use freshly grated Parmesan for best flavor.
