  • 3-4 pound corned beef brisket with spice packet
  • 1 large onion quartered
  • 2-3 carrots peeled and chopped
  • 2-3 celery stalks chopped
  • 4-6 red potatoes quartered
  • 1 large head of cabbage cored and cut into wedges
  • Water

Method
 

  1. Rinse corned beef and place in a large pot.
  2. Add onion, carrots, celery, and spice packet to the pot.
  3. Cover corned beef with water (at least 1 inch above).
  4. Bring to a boil, then simmer for 3 hours, or until tender.
  5. Add potatoes and cook for 30 minutes.
  6. Add cabbage and cook for 15-20 minutes, or until tender.
  7. Remove corned beef and let it rest for 10-15 minutes before slicing.
  8. Serve sliced corned beef with vegetables and broth.

Notes

For a richer flavor, use beef broth instead of water.
