Method
- Brown ground beef in skillet, drain grease.
- Add onion and garlic, cook until softened (5 min).
- Transfer meat mixture to slow cooker.
- Stir in vegetables, soup, broth, Worcestershire, thyme, salt, and pepper.
- Cover and cook on low (6-8 hrs) or high (3-4 hrs).
- Prepare mashed potatoes, mix in butter and milk.
- Spread mashed potatoes over meat mixture.
- Cover and cook on high for 30 minutes.
- Serve hot.
Notes
For a richer flavor, use lamb instead of beef. You can also add a layer of shredded cheese under the mashed potatoes.
