Ingredients
  

Main Ingredients
  • 1 rotisserie chicken, shredded
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 tsp dried thyme
  • 0.5 tsp dried rosemary
  • 0.25 cup all-purpose flour
  • 2 cups chicken broth
  • 1 tbsp Worcestershire sauce
  • to taste Salt and pepper
Mashed Potato Topping
  • 4 cups mashed potatoes (prepared or instant)
  • 2 tbsp butter
  • 0.25 cup milk or cream
  • 0.25 cup shredded cheddar cheese (optional)

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Sauté onion, carrots, and celery in olive oil until softened.
  3. Stir in peas, corn, thyme, and rosemary; cook for 2 minutes.
  4. Sprinkle flour over vegetables and cook for 1 minute, stirring.
  5. Whisk in chicken broth, Worcestershire sauce, salt, and pepper; simmer until thickened.
  6. Stir in shredded chicken.
  7. Combine mashed potatoes with butter and milk/cream; season.
  8. Pour chicken mixture into a baking dish.
  9. Spread mashed potatoes over the chicken mixture.
  10. Sprinkle with cheddar cheese, if desired.
  11. Bake for 20-25 minutes until golden brown.
  12. Let stand for 5-10 minutes before serving.

Notes

For a richer flavor, use homemade chicken broth. You can also add other vegetables like mushrooms or green beans.
