Easy Sweet Potato Soufflé

Ingredients
  

Sweet Potatoes
  • 12 medium sweet potatoes peeled, boiled, and mashed
  • 2 cups white sugar
  • 1 cup milk
  • 1 cup butter, melted
  • 2 tsp vanilla extract
  • 4 large eggs, beaten
  • 1 tsp salt
  • 2 cups dark brown sugar
  • cup all-purpose flour
  • cup butter, melted
  • 2 cups chopped pecans
  • 1 tsp cinnamon plus ½ tsp nutmeg in the sweet potato base
  • ½ tsp nutmeg in the sweet potato base
  • 1 tsp orange zest brightens flavor
  • ½ cup mini marshmallows sprinkled on top during last 10 minutes (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 4-qt casserole dish.
  2. Peel, boil, and mash sweet potatoes until smooth. Mix in sugar, milk, butter, vanilla, eggs, salt, cinnamon, nutmeg, and orange zest. Spread into dish.
  3. Combine brown sugar, flour, melted butter, and pecans. Sprinkle evenly on top.
  4. Bake uncovered for 55–60 minutes until bubbly and golden. In the last 10 mins, add mini marshmallows if desired.

Notes

For a more festive touch, add mini marshmallows during the last 10 minutes of baking.
