Ingredients
  

Dry Ingredients
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup plain yogurt or applesauce
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas about 2-3 medium
  • 1/2 cup chopped walnuts or pecans optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  2. Whisk together flour, baking soda, and salt.
  3. Cream butter and sugar until light and fluffy.
  4. Stir in yogurt or applesauce and vanilla extract.
  5. Add mashed bananas and mix well.
  6. Gradually add dry ingredients, mixing until just combined.
  7. Fold in chopped nuts, if using.
  8. Pour batter into the prepared loaf pan.
  9. Bake for 50-60 minutes, or until a wooden skewer comes out clean.
  10. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a richer flavor, use browned butter instead of softened butter.
