Ingredients

  • 3 ripe bananas ripe bananas
  • 2 large eggs large eggs
  • 1/4 cup peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mash bananas, then mix in eggs, nut butter, honey, and vanilla.
  3. Combine baking soda, cinnamon, salt; add to wet mixture.
  4. Stir in nuts or chocolate chips if using, then pour into pan.
  5. Bake for 25-30 minutes, cool before serving.

Notes

For extra flavor, add a dash of cinnamon or a handful of chocolate chips.
