Ingredients
  

Cake Mix
  • 1 recipe Copycat Betty Crocker Gluten Free Yellow Cake Mix
  • 1 cup very ripe mashed bananas (about 2 medium)
  • 0.5 cup unsalted butter, softened
  • 1 Tablespoon unsalted butter, softened
  • 3 large eggs
  • 0.5 cup chopped nuts (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Oil a 9x5-inch loaf pan.
  2. Add bananas and butter to mixer; beat until blended.
  3. Add eggs and beat until creamy.
  4. Add cake mix; beat on medium until just blended.
  5. Pour batter into pan; bake for 55-60 minutes. Cool before slicing.

Notes

For best results, do not over-mix the batter to prevent over-rising.
