  • 2 ripe bananas mashed
  • 1/2 cup gluten-free all-purpose flour blend
  • 1/4 cup rolled oats certified gluten-free
  • 1/4 cup brown sugar
  • 1/4 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or chopped nuts Optional

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mash bananas in a large bowl until smooth.
  3. Add flour, oats, sugar, oil, vanilla, baking soda, and salt. Mix well.
  4. Fold in chocolate chips or nuts, if desired.
  5. Drop spoonfuls of batter onto the baking sheet.
  6. Bake for 10-12 minutes, until edges are golden brown.
  7. Cool on the baking sheet before transferring to a wire rack.

Notes

For a vegan option, ensure you use coconut oil and dairy-free chocolate chips.
