Ingredients
  

Bread Cubes
  • 13-15 cups dry bread cubes (about 2 loaves of heavy white bread like French or Italian)
  • 1.5 cups unsalted butter
  • 1 cup chopped celery
  • 1 cup diced yellow onion
  • 2.25 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1.5 tablespoons poultry seasoning
  • 1.5 cups chicken stock (low-sodium preferred)
  • 2 large eggs eggs

Method
 

  1. Dry bread cubes for 48 hours or in a 250°F oven for 20-30 minutes.
  2. Melt butter and sauté celery and onion until tender, about 10-12 minutes.
  3. Mix bread cubes with sautéed vegetables, then add salt, pepper, poultry seasoning, chicken stock, and eggs. Stir well.
  4. Transfer mixture to a greased 9×13-inch dish and bake at 350°F for 30-35 minutes until golden.
  5. Garnish with herbs if desired and serve warm.

Notes

For best flavor, dry the bread cubes a day ahead.
