Ingredients
  

Dry ingredients
  • 1.5 cup whole wheat pastry flour
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 3/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp nutmeg
Wet ingredients
  • 1/2 cup golden coconut sugar (or unbleached organic sugar)
  • 1/3 cup softened butter
  • 1 large egg
  • 16 ounces pumpkin puree

Method
 

  1. Preheat oven to 325°F (160°C) and grease a loaf pan.
  2. Mix dry ingredients in a bowl. In a separate bowl, cream butter and sugar, then add egg and pumpkin, mixing well.
  3. Gradually add dry mixture to wet ingredients, mixing until just combined.
  4. Bake for 55-75 minutes until a toothpick inserted in the center comes out clean.
  5. Cool on a rack, then wrap and store. Enjoy warm, cold, or room temperature!

Notes

For best results, do not overmix the batter to keep the bread tender.
