Method
- Preheat oven to 325°F (160°C) and grease a loaf pan.
- Mix dry ingredients in a bowl. In a separate bowl, cream butter and sugar, then add egg and pumpkin, mixing well.
- Gradually add dry mixture to wet ingredients, mixing until just combined.
- Bake for 55-75 minutes until a toothpick inserted in the center comes out clean.
- Cool on a rack, then wrap and store. Enjoy warm, cold, or room temperature!
Notes
For best results, do not overmix the batter to keep the bread tender.
