  • 2 large eggs
  • 2 tablespoons maple syrup
Dry ingredients
  • 3/4 cup oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/4 cup pumpkin seeds plus extra for topping
  • pinch salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix pumpkin puree, eggs, cottage cheese, and maple syrup until smooth.
  3. Whisk oat flour, baking powder, cinnamon, nutmeg, cloves, and salt in a bowl.
  4. Fold dry ingredients into wet mixture, then stir in pumpkin seeds.
  5. Divide batter into muffin tin, sprinkle with extra pumpkin seeds, and bake for 20-25 minutes.
  6. Cool muffins before serving.
