Sweet Potatoes
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
Chopped fresh parsley

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato cubes with olive oil, honey, cinnamon, salt, and pepper until coated.
  3. Spread on baking sheet in a single layer.
  4. Roast for 25-30 minutes, flipping halfway.
  5. Sprinkle with parsley and serve warm.

Notes

For extra flavor, add a dash of cayenne pepper or a squeeze of lemon before serving.
