Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss sweet potato cubes with olive oil, honey, cinnamon, salt, and pepper until coated.
- Spread on baking sheet in a single layer.
- Roast for 25-30 minutes, flipping halfway.
- Sprinkle with parsley and serve warm.
Notes
For extra flavor, add a dash of cayenne pepper or a squeeze of lemon before serving.
