Ingredients
  

Bananas
  • 2 large ripe bananas (mashed)
Dry ingredients
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol or preferred keto sweetener
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
Wet ingredients
  • 3 large eggs
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
Optional spices and nuts
  • 1/2 teaspoon cinnamon optional
  • 1/4 cup chopped walnuts or pecans optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, eggs, almond milk, and vanilla in a bowl.
  3. Combine dry ingredients and gradually add to wet mixture, stirring well.
  4. Fold in nuts if using, then pour batter into pan and smooth top.
  5. Bake for 50-60 minutes until a toothpick comes out clean. Cool before slicing.

Notes

Using ripe bananas enhances sweetness naturally, and optional nuts add crunch.
