Method
- Preheat oven to 350°F (175°C). Grease and flour a 8-inch cake pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in lemon juice and lemon zest.
- Gradually add the dry ingredients to the wet ingredients, alternating with milk, beginning and ending with the dry ingredients. Mix until just combined.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cake cool in pan for 10 minutes before inverting onto a wire rack to cool completely.
- For the glaze, whisk together powdered sugar and lemon juice until smooth. Add more lemon juice for desired consistency.
- Drizzle glaze over cooled cake.
Notes
For a more intense lemon flavor, add more lemon zest to the batter.
