Ingredients
  

Dry ingredients
  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup erythritol or sweetener of choice
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
Wet ingredients
  • 2 large eggs
  • 1/2 cup unsweetened almond milk
  • 1/2 cup mashed ripe banana (about 1 small banana)
  • 1 tsp vanilla extract
Optional add-ins

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix dry ingredients in a bowl.
  3. Whisk wet ingredients in another bowl.
  4. Combine wet and dry, fold in optional add-ins, then fill muffin cups.
  5. Bake for 18-20 minutes, cool before serving.

Store in an airtight container for up to 3 days or freeze for longer storage.
