  • 1 cup prepared macaroni and cheese (homemade or store-bought)
  • 1/4 cup shredded cheddar cheese (optional)
  • 1 tablespoon butter

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wash and scrub the baking potato. Pierce it several times with a fork.
  3. Bake the potato for 1 hour, or until soft when pierced with a fork.
  4. Carefully remove the potato from the oven and let it cool slightly.
  5. Slice the potato lengthwise and fluff the inside with a fork.
  6. Stir in butter, salt, and pepper.
  7. Top the potato with the prepared macaroni and cheese.
  8. Sprinkle with shredded cheddar cheese, if desired.
  9. Return the potato to the oven for 5-10 minutes, or until the cheese is melted and bubbly (if using).
  10. Serve immediately.

Notes

For a richer flavor, use a sharp cheddar cheese in your macaroni and cheese.
