Ingredients
  

Protein
  • 4 pieces boneless, skinless chicken breasts
  • 1 cup pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
Vegetables
  • 4 medium sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • Fresh thyme or parsley for garnish (optional)

Method
 

  1. Preheat oven to 400°F (200°C). Prepare a baking dish.
  2. Whisk maple syrup, Dijon mustard, garlic powder, onion powder, salt, and pepper. Set aside some marinade for glazing.
  3. Place chicken in dish, coat with marinade. Toss sweet potatoes with oil, salt, and pepper; spread around chicken.
  4. Bake for 25-30 minutes. Brush reserved marinade over chicken in last 5 minutes.
  5. Rest for 5 minutes, then garnish with herbs if desired. Serve and enjoy!
