  • 2 pieces ripe bananas, mashed
  • 1/3 cup melted butter
  • 1/2 cup sugar
  • 1 piece egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch salt
  • 1 cup all-purpose flour

Method
 

  1. Preheat oven to 350°F (175°C) and grease mini muffin tin.
  2. Mix mashed bananas and melted butter.
  3. Add sugar, egg, and vanilla; stir well.
  4. Stir in baking soda, salt, then flour until just combined.
  5. Spoon batter into muffin tin, about 2/3 full.
  6. Bake for 10-12 minutes; cool before serving.

Notes

Use ripe bananas for best flavor and sweetness.
