Method
- Preheat oven to 350°F (175°C) and line a muffin tin.
- Mix mashed bananas with melted butter, then add baking soda, salt, sugar, egg, and vanilla.
- Stir in flour until just combined.
- Scoop batter into muffin cups about 2/3 full.
- Bake for 18-20 minutes until a toothpick comes out clean.
- Cool muffins briefly before removing from tin.
Notes
Use ripe bananas for best flavor and moisture.
