Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon ground cinnamon
  • 1 tablespoon brown sugar

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas with melted butter, then add baking soda, salt, sugar, egg, and vanilla.
  3. Stir in flour until just combined. Mix cinnamon and brown sugar separately.
  4. Pour half of batter into pan, sprinkle with cinnamon sugar, add remaining batter, swirl, and top with remaining cinnamon sugar.
  5. Bake for 60-65 minutes, cool in pan for 10 minutes, then transfer to wire rack.

Notes

For a moister loaf, let it cool completely before slicing.
