Method
- Preheat oven to 350F.
- Grind oats into fine oat flour using a food processor. You want 2.75 cups of oat flour.
- Mash bananas in a bowl. Whisk together maple syrup, eggs, mashed bananas, and almond milk.
- Add cinnamon, salt, baking soda, and baking powder to oat flour. Mix to combine.
- Add the wet mixture to the flour mixture and mix until combined. The batter will be sticky.
- Let the mixture sit for five minutes.
- Line a loaf pan with parchment paper sprayed with cooking spray.
- Add mixture to the bread pan and place it on the top rack of the oven.
- Bake for 50-55 minutes until a toothpick comes out clean.
- Let cool completely, ideally overnight in the fridge.
Notes
For best results, let the bread cool completely before slicing to prevent crumbling.
