  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 1 cup granulated sugar
  • 1.75 cups all-purpose flour
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix bananas, pumpkin, eggs, oil, sugar, and vanilla until smooth.
  3. Combine flour, cinnamon, baking soda, and salt.
  4. Gradually add dry ingredients to wet, stir until just combined.
  5. Pour batter into pan, bake 50-55 minutes. Cool before slicing.

Notes

For a richer flavor, add a pinch of nutmeg or cloves.
