  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line a muffin tin.
  2. Mix bananas, pumpkin, sugars, oil, eggs, and vanilla until smooth.
  3. Whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  4. Combine dry and wet ingredients; fold in nuts if using.
  5. Divide batter into muffin cups and bake 18-20 minutes.
  6. Cool muffins before serving.
