  • 1/2 cup brown sugar light or dark
  • 1/4 cup maple syrup
  • 1/4 cup neutral oil like avocado or vegetable
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/2 cup chopped nuts or chocolate chips optional

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a 9x5 loaf pan.
  2. Whisk pumpkin, eggs, sugar, syrup, oil, and vanilla until smooth.
  3. Mix dry ingredients and spices; fold into wet ingredients.
  4. Stir in optional nuts or chocolate chips.
  5. Pour batter into pan, smooth, and bake 55–65 mins. Cool before slicing.
