Wet ingredients
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1 teaspoon vanilla extract
Cheesecake filling
  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/4 teaspoon vanilla extract (for filling)

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Mix dry ingredients in a bowl; cream butter and sugars, then add pumpkin and vanilla.
  3. Combine dry and wet ingredients; beat cream cheese with powdered sugar and vanilla for filling.
  4. Scoop dough, make indentations, fill with cheesecake mixture, and bake 12-15 minutes.

Notes

Ensure not to overbake for soft, chewy cookies.
