Ingredients
  

Dry Ingredients
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon pumpkin pie spice
  • ½ teaspoon salt
Wet Ingredients
  • ¾ cup unsalted butter, room temperature
  • ¾ cup granulated sugar
  • ½ cup light brown sugar, packed
  • 1 ¼ cups canned pumpkin puree
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
Frosting
  • 8 ounces cream cheese, softened but still cool
  • ¼ cup unsalted butter, softened but still cool
  • 1 teaspoon pure vanilla extract
  • 1 ¾ cups sifted confectioners’ sugar

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment.
  2. Mix dry ingredients: flour, baking powder, baking soda, salt, pumpkin pie spice.
  3. Cream butter and sugars until fluffy, then add pumpkin, egg, vanilla; mix well.
  4. Gradually add dry ingredients; mix until just combined. Drop dough onto baking sheet.
  5. Bake 13-15 minutes, cool. Beat cream cheese and butter, add vanilla and sugar to make frosting.
  6. Frost cooled cookies with cream cheese frosting.

Notes

Chill the dough if too sticky for easier handling.
