Method
- Preheat oven to 350°F (175°C). Line baking sheet with parchment.
- Mix dry ingredients: flour, baking powder, baking soda, salt, pumpkin pie spice.
- Cream butter and sugars until fluffy, then add pumpkin, egg, vanilla; mix well.
- Gradually add dry ingredients; mix until just combined. Drop dough onto baking sheet.
- Bake 13-15 minutes, cool. Beat cream cheese and butter, add vanilla and sugar to make frosting.
- Frost cooled cookies with cream cheese frosting.
Notes
Chill the dough if too sticky for easier handling.
