Ingredients
  

Pumpkin and Cream Cheese
  • 1 cup canned pumpkin puree
  • 1/2 cup cream cheese, softened
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Method
 

  1. Preheat oven to 350°F (175°C) and line muffin tin.
  2. Mix pumpkin, cream cheese, sugars, oil, and eggs until smooth.
  3. Whisk dry ingredients separately, then combine with wet ingredients.
  4. Fill muffin cups 2/3 full and bake for 18-20 minutes.
  5. Cool muffins in pan 5 minutes, then transfer to wire rack.

Notes

For best results, use fresh pumpkin puree and softened cream cheese.
