Method
- Preheat oven to 350°F (175°C) and line muffin tin.
- Mix pumpkin, cream cheese, sugars, oil, and eggs until smooth.
- Whisk dry ingredients separately, then combine with wet ingredients.
- Fill muffin cups 2/3 full and bake for 18-20 minutes.
- Cool muffins in pan 5 minutes, then transfer to wire rack.
Notes
For best results, use fresh pumpkin puree and softened cream cheese.
