Ingredients

  • ½ cup butter, softened
  • 1 cup brown sugar
  • ¼ cup pumpkin puree (not pumpkin pie filling)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cups old-fashioned oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • ½ cup chocolate chips, white chocolate chips, raisins, or chopped pecans/walnuts

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment.
  2. Cream butter and sugar, then mix in pumpkin, egg, and vanilla.
  3. Combine oats, flour, baking soda, and spices; mix into wet ingredients.
  4. Drop dough onto sheets, spacing 2 inches apart, and bake 12–14 minutes.
  5. Cool cookies before serving.

Notes

For softer cookies, slightly underbake and cool on the baking sheet.
