Method
- Cream together butter, sugars, pumpkin, egg, and vanilla until smooth.
- Mix dry ingredients separately, then combine with wet mixture. Chill for 30 minutes.
- Preheat oven to 350°F (175°C). Scoop dough onto baking sheets and bake for 12–14 minutes. Cool completely.
- Beat cream cheese and butter until creamy. Add vanilla and cinnamon, then gradually mix in powdered sugar until smooth.
- Spread frosting on cooled cookies. Garnish with cinnamon or nuts if desired.
