Dough
  • 1 cup canned pumpkin puree
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
Dry ingredients
  • 1 ½ cups all-purpose flour
  • 1 ½ cups old-fashioned oats
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground cloves
Frosting
  • 8 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 cups powdered sugar

Method
 

  1. Cream together butter, sugars, pumpkin, egg, and vanilla until smooth.
  2. Mix dry ingredients separately, then combine with wet mixture. Chill for 30 minutes.
  3. Preheat oven to 350°F (175°C). Scoop dough onto baking sheets and bake for 12–14 minutes. Cool completely.
  4. Beat cream cheese and butter until creamy. Add vanilla and cinnamon, then gradually mix in powdered sugar until smooth.
  5. Spread frosting on cooled cookies. Garnish with cinnamon or nuts if desired.
