  • 1 medium onion
  • 10.75 ounce cream of mushroom soup or cream of celery soup
  • 1 teaspoon dry mustard
  • 1.5 cups diced cooked corned beef
  • 5 cups coarsely shredded cabbage
  • Salt to taste
  • Freshly ground black pepper to taste

Method
 

  1. Gather the ingredients.
  2. Preheat oven to 375 F.
  3. Peel and chop the onion.
  4. Combine soup, onion, and mustard. Add corned beef and cabbage; turn into a buttered baking dish.
  5. Sprinkle salt and pepper over the casserole.
  6. Cover with foil and bake for 30 minutes. Check for dryness, add liquid if needed. Continue cooking for 30 minutes, or until cabbage is tender.
  7. Serve and enjoy.

Notes

For a richer flavor, use beef broth instead of water.
