  • 1.25 cups plain yogurt
  • 2 large eggs
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 1 teaspoon white sugar
  • to taste cayenne
  • 1.125 cups self-rising flour
  • 6 oz grated Cheddar cheese, divided
  • 2 tablespoons green onions, plus more for garnish
  • 1 cup elbow macaroni
  • 0.25 cup melted butter, plus more for greasing
  • 0.25 cup reserved pasta water

Method
 

  1. Grease a cake pan with butter and add parchment paper.
  2. Preheat oven to 425 degrees F (220 degrees C).
  3. Combine yogurt, eggs, salt, pepper, sugar, and cayenne. Add flour, 5 oz cheese, and green onions.
  4. Cook macaroni until al dente, reserving 1/4 cup pasta water. Drain.
  5. Add melted butter, macaroni, and pasta water to batter. Transfer to pan, top with remaining cheese and cayenne.
  6. Bake until cheese is browned and cake is set, about 25 minutes. Garnish with green onion.

Notes

For a richer flavor, use sharp cheddar cheese. Adjust cayenne pepper to your spice preference.
