  • 2 lbs beef chuck cut into 1-inch cubes
  • 1 cup red grape juice (Burgundy or Pinot Noir)
  • 2 cups beef broth
  • 1 medium onion chopped
  • 4 cloves garlic minced
  • 2 cups carrots sliced
  • 2 cups mushrooms quartered
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • to taste Salt and pepper
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Method
 

  1. Brown beef in olive oil, then transfer to slow cooker.
  2. Sauté onions and garlic, then add to slow cooker.
  3. Add carrots, mushrooms, grape juice, broth, tomato paste, thyme, bay leaf, salt, and pepper to slow cooker. Stir.
  4. Cook on low for 8 hours or high for 4 hours, until beef is tender.
  5. Remove bay leaf. Garnish with parsley and serve.

Notes

For a richer flavor, use a high-quality Burgundy wine instead of grape juice.
