Method
- Brown beef in olive oil, then transfer to slow cooker.
- Sauté onions and garlic, then add to slow cooker.
- Add carrots, mushrooms, grape juice, broth, tomato paste, thyme, bay leaf, salt, and pepper to slow cooker. Stir.
- Cook on low for 8 hours or high for 4 hours, until beef is tender.
- Remove bay leaf. Garnish with parsley and serve.
Notes
For a richer flavor, use a high-quality Burgundy wine instead of grape juice.
