Ingredients
  

Dry ingredients
  • 1 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp pumpkin pie spice
Wet ingredients
  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
Cream cheese filling
  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar

Method
 

  1. Preheat oven to 375°F (190°C) and line a muffin tin with liners.
  2. Mix dry ingredients in a bowl; combine wet ingredients separately.
  3. Combine wet and dry until just mixed; beat cream cheese with powdered sugar until smooth.
  4. Fill muffin cups halfway, add cream cheese, then top with remaining batter.
  5. Bake for 20-22 minutes until golden and a toothpick comes out clean.

Notes

Ensure not to overmix the batter for tender muffins.
