  • 2 1/2 cups oat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup coconut oil melted
  • 1/2 cup maple syrup or honey
  • 3 bananas very ripe
  • 1 teaspoon vanilla
  • 3/4 cups pecans optional
  • 2 eggs

Method
 

  1. Preheat oven to 325 degrees Fahrenheit
  2. Prepare a 9x5 loaf pan with parchment paper.
  3. Mash bananas in a medium-sized bowl.
  4. Stir coconut oil, eggs, maple syrup, and vanilla with bananas.
  5. Add dry ingredients to the wet mixture and stir.
  6. Stir in pecans (optional)
  7. Bake at 325 degrees Fahrenheit for 45-55 minutes or until a toothpick comes out clean.

Notes

For a richer flavor, use browned butter instead of coconut oil.
