Wet ingredients
  • 2 pieces ripe bananas, mashed
  • 1 cup pumpkin puree
  • 1/4 cup maple syrup or agave nectar
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
Dry ingredients
  • 1 1/2 cups gluten-free flour blend
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup walnuts or pecans, chopped (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, pumpkin, syrup, oil, and vanilla in a bowl.
  3. Combine dry ingredients in another bowl.
  4. Gradually add dry to wet, mix until just combined, then fold in nuts.
  5. Pour batter into pan, bake 50-60 mins, cool before slicing.
