Ingredients
  

Bread
  • 1 loaf day-old bread, cubed
  • 1 cup unsalted butter
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 2 cups chicken or vegetable broth
  • 1 tablespoon dried sage
  • 1 tablespoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 large eggs, beaten
  • 1 cup fresh parsley, chopped

Method
 

  1. Preheat oven to 350°F (175°C). Toast bread cubes for 10 minutes.
  2. Melt butter in a skillet, cook onion and celery until softened.
  3. Mix toasted bread, sautéed vegetables, broth, sage, thyme, salt, and pepper.
  4. Add eggs and parsley, combine well, transfer to baking dish, cover with foil.
  5. Bake covered for 30 minutes, then uncover and bake 15-20 minutes until golden.

Notes

For extra flavor, add a pinch of thyme or sage to taste.
